Eggplant and Brie

i have always enjoyed cooking, probably inherited from my mom, but i've never gone past the basic cookies and cupcakes. this summer however i've tried to expand my culinary repertoire- i've made tomatoes stuffed with bread crumbs & parmesan cheese, pistachio macaroons, banana chocolate chip loaf, & a peach & ricotta galette.

yesterday i made what was supposed to be eggplant tacos (from the forest feast) but instead of folding them like tacos i simply layered them with a slice of brie. i also realized that i didn't have any cilantro- it was a very "make it work" moment. these were a great compliment to our dinner and the cheese, which i got at the farmers market was a big hit!
